Ricotta: From Calabria to Your Kitchen


Janet Fletcher will lead us on a deep dive into the world of fresh ricotta, an essential ingredient for cannoli; a divine addition to cheesecake, ice cream and flans; and a fluffy topping for pizza and flatbreads. Janet is the co-author, with Rosetta Costantino, of My Calabria (W. W. Norton), and she will show images of ricotta production in Calabria, plus a short video of Rosetta’s mother making ricotta at home. Janet will advise us on what to look for and what to avoid in commercial ricotta, and we’ll taste her homemade ricotta and two storebought ricottas side by side.

As an added bonus we are going to taste farm fresh 6% whole milk from Alexandre Family Farm, a 5th generation farm located in Crescent City. They produce A2/A2 beta casein protein milk. This is old fashioned milk that is natural to our bodies and is easily absorbed besides tasting fantastic. Stephanie and Callie Alexandre will be on hand to tell us more between 10-10:30.  


Janet Fletcher is the author or co-author of nearly 30 books on food and beverage, including Cheese & Wine, Cheese & Beer and Yogurt: Sweet and Savory Recipes for Breakfast, Lunch, and Dinner. Janet publishes the weekly Planet Cheese blog and is the cheese columnist for Specialty Food and Somm Journal magazines. She teaches cooking and cheese-appreciation classes around the country. Her journalism has received three James Beard Awards and the IACP Bert Greene Award, and her food writing has appeared in numerous national publications, including The New York Times, Saveur, Fine Cooking and Food & Wine.
